MAJA flake ice machines for use by producers of bread, cakes and pastries

For the production of doughs for bread, salted cakes and pastries, flake ice is keeping the dough temperature (in the kneading machine) at the required minimum. The added ice is mixing evenly with the material to be cooled. With the big surface of the rather cold and dry frozen MAJA ice flakes of – 7 ° C the cold is extending quickly and evenly in the dough without influencing the recipe negatively by dilution. MAJA flake ice prevents the yeast from rising too quickly, thus the dough can be processed better and gets the ideal consistency. The result can be seen in high-quality products.

Capacities from 80 kg for small bakeries up to capacities with several tons in 24 hours for large plants of the baking industry. MAJA offers compact machines with integrated ice storage drawers or rotating evaporators with separate refrigeration unit in a modular system.

Options for hygiene

Especially for big ice plants with difficult access for the cleaning operation, the automatic evaporating self cleaning system should be part of the equipment. At the touch of a button the evaporator interior can be cleaned from dirt and lime deposit – this is an important aspect, when ice is added to food.
