With the BXM LOIN, pork loins (bone-in and boneless) without neck/spare rib can be defatted in a simple and cost-saving way. The backfat is removed from the loin in a single piece with skin attached, making it suitable for further processing, such as fully automatic derinding. For defatting about 800 pork loins per hour.
